Ingredients:

Cup of peas

A kilo of lamb

2 onions

1 tablespoon of salt

1 teaspoon of black pepper

1 tablespoon of carcuma

1 tablespoon of ginger

2 crushed garlic cloves

1/4 glass of Olive oil

Small bunch of parsley or coriander (tied using a string)

Method;

  • Put all the ingredients (except the bunch of parsley or coriander) in the pot on medium heat and brown the meat
  • Add cold water once done almost covering the meat completely
  • Then add the bunch of parsley or coriander and close the lid and cook on a low heat until the meat is soft and tender (check occasionally and stir)
  • When the meat is more or less done add the peas and cook for about 10 minutes longer
  • Remove the bunch of parsley or coriander and serve
  • Add some chopped fresh parsley or coriander on top to decorate

Easy, Authentic Hummus Recipe

 

Hummus Recipe 🍽

Ingredients:

• 1 can of chickpeas
• 1/4 of a cup of tahini (sesame oil)
• 1 small clove of crushed garlic
• 4 tablespoons lemon juice
• 3 tablespoons olive oil
• ½ teaspoon salt
• 2 tablespoon water

Directions:
• Wash and rinse the chick peas. If they are the canned ones you will not need to soak them overnight.
• Add the chick peas, tahini, garlic, lemon juice, olive oil, and salt, to the blender and purée for 2 minutes until all the ingredients are well combined into a smooth paste
• Scrape the sides and add 2 tablespoons of water to thin out the paste (depending on how you like your hummus)
• Continue blending until you get a smooth and creamy paste • Decorate with olives, lemon peel, coriander leaf and paprika (Hummus and zalook is an amazing combo, see my wordpress account @maroccfood

Briwat Recipe (Sweet Almond Pastries)

Briwat Recipe (Sweet Almond Pastries) – Filo pastry used same as samosas

Want to make one of the most popular cake/pastry that is eaten in Morocco? Briwat are so easy to make and are made throughout the year, especially in Ramadan to break your fast or on Eid. Filo pastry/spring roll pastry is used on the outside with sweet almond filling on the inside, dipped in honey and sprinkled with sesame seeds at the end- yum!

It’s so easy to make if you follow my simple recipe!

Ingredients:
Filo pastry (Spring roll pastry)
100g of almonds
90g of sugar
2 tablespoons of butter
2 tablespoons of orange blossom water
2 teaspoons of cinnamon powder
1 egg
Vegetable oil for frying
1 jar of honey to dip each pastry in at the end
Sesame seeds for decoration

  • Make the almond filling:
    – Wash the almonds. Pour boiling water on the almonds, leave for 10 minutes. Then peel the skin off (should be very easy to come off at this point, if not pour more hot water on it).- Once all the skin has been peeled off pour in the sugar mix then blend it in a blender until you get a fine texture.- Pour into a bowl then add the rest of the ingredients, 2 table spoons of butter, 2 tablespoons of orange blossom water and 2 teaspoons of cinnamon the mix with your hands. You should be able to easily shape it in your hands. Roll a small balls and set aside. (Walnut size or smaller depending on the size of the cut filo pastry)

 

  •  Cut the pastry:
    – Take one sheet of the pastry and cut it lengthways into 4 strips about 2cm wide. Put the small ball of almond paste at the top towards the corner of the strip of filo pastry and start folding (like your making samosas). Keep a triangle shape whilst folding ensuring there is no holes for the filling to come out when frying. Left to right then right to left.- You will need to brush an egg yolk to close the pastry. So, with a fork mix the egg and brush the remaining piece of the filo sheet with the egg.- Once you have done this and used all the almond paste and you have small triangle pastries, you are ready to start frying!

    – So, when the oil is hot add the pastries and cook on both sides until you have a nice golden colour.

    – Dip it into the honey whilst hot and leave it for about 1 minute in a bowl then sprinkle some sesame seeds on top.

Sfinge recipe (Moroccan Doughnuts)

EASY Sfinge Recipe (Moroccan Doughnuts)

Click the link to see how I made these amazing Moroccan doughnuts! You will only need 5 basic ingredients which include the vegetable oil for frying them!

Sfinge is an airy and very light doughnut made with a sticky, almost batter-like yeasted dough that fries up like an Italian zeppole. Once the sticky dough is made you will need to wet hands your hands with cold water to simply pinch off a knob of the batter and gently stretch the bit of dough into a ring shape before dropping it into hot oil.

Sprinkle with sugar and enjoy!

Khobz (Moroccan bread recipe)

Ingredients: 1 tablespoon dry yeast 1/2 tablespoon of sugar for the yeast 3 cups of all purpose flour 1 teaspoon of salt 1 tablespoon of vegetable oil

Directions:

1. You will need to activate the yeast separately. Mix 1 tablespoon of dry yeast with 1 teaspoon of sugar in a small bowl, mix it and leave it to activate for about 5 minutes.
2. In a large bowl, mix the flour with 1 tablespoon of vegetable oil, 1 teaspoon of salt, 1/2 teaspoon of sugar then pour in the yeast mixture.
3. Add warm water bit by bit whilst forming a dough. You will only need enough to form a ball. The dough should not be sticky or too dry. (If it is too sticky just add a bit of flour.)

The kneed the dough:
1. Place the dough on a clean kitchen counter and start kneeding it. Refer to the video to see the kneeding technique. You will need to use the palm of your hand, the movements will need to be fast and energetic. (Do this until the dough has become soft and elastic, normally about 5 minutes.)
2. Cut the dough using your hands into 4 equal dough balls and kneed them all one by one for about 5 minutes.
3. Place them in a tray and cover for about 10-15 minutes. Sprinkle flour on the counter then flatten it with the palm of your hands. 1/4 inch thickness.
4. Place on a baking pan and leave it to rest for 1-2 hours until the dough has risen more.

Then bake:
1. Poke the dough with a knife in about 4-5 places.
2. Cook on 400F degrees for about 20 minutes. You will need to turn them over. Dough isn’t always easy to get right, you may need to try a few times until you perfect it but I hope this recipe will be easy to follow.

Seafood potato salad recipe🦞

Seafood potato salad using ONLY 5 main ingredients!

Ingredients:

•a pack of new potatoes

•a pack of seafood sticks

•tiny bunch of parsley/coriander

•half an onion

•2 garlic cloves

•squeeze of lemon

Method:

•boil potatoes until the skin starts peeling off not too soft

•meanwhile chop the onion (very finely), parsley, garlic and seafood sticks. •mix everything together and add a drizzle of olive oil

•add the spices (to your taste). I used 1/2 table soon of salt, 1 teaspoon of pepper, 1 teaspoon of ginger

Side note: make sure you cut the onion very finely it can be overpowering so add less then you can always add more at the end.

Classic Moroccan Cucumber and Tomato Salad

Hello everyone! Hope you are all doing well. Sometimes we put off cooking as we are often bombarded with complex recipes. Hopefully this simple recipe will change you mind and help you feel more comfortable experimenting with food

Now, if you have ever been to Morocco you know that this is a staple salad which is served along side zalook as a starter before delving in to a lovely tagine ! It is very basic, but your guest will most definitely ask you what your secret ingredient is. The truth is, there is none. You can make this salad with you every day ingredients I guarantee you have in your kitchen right now… well you should have lol

To make this refreshing healthy salad, all you will need is:

Ingredients:

  • 6 medium tomato’s (seeded and chopped in to small cubes)
  • 1 medium onion (chopped in to small cubes)
  • 1 cucumber (chopped in to small cubes)
  • 3 tablespoons of olive oil (alter to your taste preference)
  • 3 tablespoons of finely chopped parsley
  • 1 1/2 table spoons of lemon juice
  • salt and pepper
  • 1/2 teaspoon of ginger

(you can add some green peppers and red peppers if you are feeling slightly adventurous although I hardly do)

Method:

  • (mix all ingredients well adding spices and olive oil at the end ) and serve in this beautiful tradition Moroccan salad clay bowl
